I am not a great cook, as a matter of fact, I don’t really enjoy cooking… but I do like to eat whole healthy satisfying foods. This salad is a go-to in my house including our 14-year-old son who asks for it! Let me know what you think!
Chickpea “Tuna” Salad (vegan)
- Rinse a 15oz can of chickpeas, place them in a bowl, and mash them up – I use a mash potato masher, so some stay chunky.
- Add to your liking: cut celery, diced onion, dill relish (I add lots of this), a few dashes of garlic powder, squeeze 1/2 lemon, salt, and pepper. And mix well with the chickpeas.
- Add 2-4 tablespoons of vegan mayo or hummus.
- Eat over a bed of spinach or as a sandwich!
